Handpicked grapes, yielding less than 30 hl/ha, were cold soaked for 36 hours before fermentation with regular pump-overs around the clock. Malolactic fermentation in new French barriques and total maturation for 15 months. No fining before bottling . Very dark and intense – elderberry . . . . Then sweet and acid and very berry.
