"Our Santa Barbara County Chardonnay is comprised of fruit from various high quality vineyard sites throughout the county, with the majority grown at the the Kick-on Ranch. This bottling is intended to provide great value and represenation, while keeping focus on quality and typicity. The chardonnay is whole cluster pressed to tank, settled briefly before being moved to another tank for fermentation. After fermentation is active, the juice goes down to 228L barrels and 500L puncheons. We perform no battonage and the wine goes through full Malolactic Fermentation. The wine is left on lees for 11 months before going back to tank for an additional few months of aging. The finish is appetizing thanks to fine acidity and phenolic structure, which hold the mouth reassuringly on the finish. An excellent wine that offers real drinkability in youth thanks to its appealing primary fruit, but there's no hurry at all to drink. "The eponymous red 2021 Antídoto comes from a myriad of plots ranging between 30 and 100 years of age in the Soria part of Ribera del Duero at some 950 meters in altitude on stone, limestone sand and clay soils. It fermented with indigenous yeasts and matured for nine months in 600-liter French oak barrels, only 5% of them new. It's creamy, velvety and juicy, with 14.57% alcohol and good freshness and acidity. With time in the glass, it develops more complexity and is herbal, meaty and floral, with very fine, chalky tannins. It feels young and lively but approachable.
