Tradition reigns at Haut-Ségottes. Harvest is manual. Fermentation takes place in cuve. Wines are rotated into barrel for an “elevage” of approximately 18 months. Approximately 20% of the barrels are new. Wines are bottled unfiltered. Although the majority of the vineyards are planted to Merlot (see above), the ultimate cuvée bottled as Chateau Haut Segottes Saint Emilion Grand Cru features a majority of Cabernet Franc. This dominance of Cabernet Franc (frequently on the order of 65%) produces a wine of considerable structure and is exceptionally age-worthy. “The holding is in the angle at the northern end of the vineyard, where Laurent has had a nice little wall in dry stone built. Dark black colour with light purple rim. As ever, this is much more Morey than Chambolle. Rich deep dark fruit with its typical savoury edge, dark raspberry notes, a little plum, flavours which reach far to the back of the palate. “The 2020 Chambolle-Musigny 1er Cru Les Baudes opens in the glass with aromas of cherries and red berries mingled with sweet spices, loamy soil and rose petals. Medium to full-bodied, lively and concentrated, with fine concentration and a seamless, elegantly muscular profile, it's a fine success that's a worthy follow-up to the 2019 rendition. Laurent Lignier began his harvest on August 27, reporting below-average yields and finished alcohols between 13% and 14%. Once again, the result is a fine vintage for both his domaine holdings and négociant sources—the latter, amounting to some 3.5 hectares of vines, now clearly distinguished in our reviews. As readers will know, winemaking is pretty classical at this address, with a short cold maceration, two to three weeks' maceration with one pigéage and one rémontage per day and maturation in barrels, some one-third of which are new—if possible, without racking—for fully 22 months in the domaine's cold cellars. "The 2020 Chambolle-Musigny Les Baudes 1er Cru, which snuggles up just below Bonnes-Mares, has a well-defined bouquet, very floral with peony and incense infusing the dark cherry and boysenberry fruit. The palate is very concentrated with supple tannins, quite expansive in style with touches of liquorice surfacing towards the graphite-tinged finish. Very fine, but it will need time. ."A small amount of Cotes du Rhone is produced from the vineyards owned by the estate in the communes of Vacqueyras and Violes. As with the more noble Gigondas, this cuvée is based almost exclusively on the Grenache grape (approximately 90% of the blend annually). It is vinified in a fashion similar to the Gigondas except that the elevage is less long. Its soils of sand, clay, and large galets render a white wine of formidable amplitude but excellent focus, given shape by a touch of appealing bitterness on the finish. "Vigna Ca' Mia is in the most southeasterly part of the Brea MGA in Serralunga. Definitely the most representative wine of this 'menzione', the wine is very pale ruby in colour with an intense aroma of violet and red currants which then opens up to reveal sweet, exotic spices with touches of linden tree and camphor depth. This interpretation exhibits elegant tannins, between chalk and dust in terms of texture, with crisp acidity and a good, slightly bitter finish which imparts character and length to the wine. The wine is almost sanguine in character, but in a manner that enhances all the other beautiful characteristics on hand. Produced exclusively from the Nebbiolo grape planted in a series of vineyards that sit beneath Mont Blanc (Monte Bianco) in a broad amphitheatre with full southern exposure overlooking the river, Dora Baltea, that runs from the snow-capped mountains south through the Valle d’Aosta into the northwestern range of Piedmont slicing the city of Ivrea in half. The vines are trained in a special way on pergola (known as “tupin” in local dialect) to obtain maximum exposure to the sun in this high altitude district and are planted to soils that are dominated by slate. "This is the standard-bearer for the estate. The vines are planted exclusively within the confines of Barbaresco and are scattered among various 'crus', including Rabaja and Pozzo. The average age of the vines is 35 years. After harvest, the juice is fermented in stainless steel for approximately two weeks; then the wine is racked into large oak 'botti' to age at least 18 additional months and frequently longer before being bottled.
