This wine comes from a 3-hectare Clos managed under sustainable practices with no use of herbicides. The east-facing vines are 70 years old. The shallow terroir consists of reddish soil mixed with limestone stones, with bedrock often found just 30 cm below.
After manual harvesting, the grapes are pressed slowly. A light static settling is performed to retain as much material as possible before fermentation, which is often very long. This process occurs thanks to the indigenous yeasts naturally present on the grapes. No additives, except for meticulously added sulfites, interfere with the birth of this wine.
The wine has a powerful nose, delicate with notes of hawthorn and pears. The palate is round and generous with ripe fruit, supported by balance and purity. A truly great wine for aging, already pleasant to taste.

The vines in Nuits Saint Georges were planted in 2013, while those in Villers are impressively between 50 to 80 years old. These two vineyards are characterized by their deep clay soils. "Grand Classique” combines Grenache and Cinsault in roughly equal proportions, with Carignan playing a minor role. Rather than being pressed immediately after harvest by rote as many Provence rosés are, Roselyn Gavoty macerates for several hours before pressing, and the saignée and first-press juice are vinified separately, allowing her the flexibility to blend the more succulent and tender saignée with the more angular and architectural press-juice in a manner to achieve the precise textural qualities she seeks. “Grand Classique” displays an uncanny equilibrium, with racy acidity wed to gleaming fruits that are just the right amount of vinous, all buttressed by an elegant, mouthwatering texture that speaks to Roselyn’s consummate blending skills." “Bottled at the beginning of July, the 2021 Côtes Du Rhône Coudoulet De Beaucastel shows the fresher, focused style of the vintage yet brings beautiful fruit. Red, blue, and black fruits, peppery herbs, and underbrush notes define the aromatics, and it's medium-bodied, with ripe, polished tannins and a great finish. One of the stalwarts of the appellation, Château de Beaucastel continues to produce an incredible array of wines from their estate in the northwestern edge of the appellation. Looking at the vintages reviewed here, the 2022s are ripe, sexy wines that bring to mind 2019 or even 2009. The whites are absolutely brilliant, and while only tasted from barrel, the 2022s will certainly be incredible wines. The 2021s also showed well and possess more depth and density than most in the vintage. In general, Mourvèdre seemed more challenging in 2021, but you certainly wouldn’t have that impression after tasting at Beaucastel. The closest comparison here for the 2021s would be the 2008s, which are balanced, elegant wines that are still drinking beautifully today. The 2021s should be a step up in quality, although I suspect they will evolve along a similar trajectory. Lastly, the estate is wrapping up a massive renovation of the cellar that was built with sustainability front and center and will be using an evaporative cooling mechanism with stored rainwater.” 90, Jeb Dunnuck, Oct, 2023
