The Aligoté grapes used for the Domaine's only white wine come from a total of 2.26 hectares of vineyards. A tiny 0.13 hectares situated in the commune of Nuits Saint Georges and 2.13 hectares in Villers-La-Faye in the Hautes Côtes are the sources. The vines in Nuits Saint Georges were planted in 2013, while those in Villers are impressively between 50 to 80 years old. These two vineyards are characterized by their deep clay soils. The winemaking process involves spontaneous yeast fermentation and aging for a period of 6 months in stainless steel tanks.

The malolactic fermentation is done, the wine gains in finesse on the finish and the Mourvèdre brings power to give a real gastronomic Rosé. The vintage is ample, fruity and spicy with a tonic mineral finish. "Our 2022 Syrah is a gorgeous example of the variety, coming from some of the best Syrah vineyards in California. The backbone for the wine is the Rancho Arroyo Grande vineyard in the San Luis Obispo Coast appellation, making up just over half the blend. This cool and windy site is located about 7 miles from the ocean, yielding beautiful spicy fruit. The rest of the blend is composed of Syrah from our Sonoma Coast sites: Baker Lane, Solas Vineyard and Clary Ranch. All of the vineyards were harvested at perfect maturity and fermented whole cluster with native yeasts, before blending and aging in neutral oak barrels, along with 30% aging in concrete tank and 10% in French oak foudre. Readers will note a number of new releases in this year’s collection. When I first met Willett, a dozen years ago, Tyler was a new winery working exclusively with purchased fruit. Today, Tyler owns two estate vineyards, the new Mae Estate and the historic Fiddlestix, both in the Sta. Rita Hills, and produces a far wider range of wines. That is a dramatic transformation in a very short period of time. In general, the Chardonnays see 10 months in barrel followed by 6-8 months in tank. "Our Santa Barbara County Chardonnay is comprised of fruit from various high quality vineyard sites throughout the county, with the majority grown at the the Kick-on Ranch. This bottling is intended to provide great value and represenation, while keeping focus on quality and typicity. The chardonnay is whole cluster pressed to tank, settled briefly before being moved to another tank for fermentation. After fermentation is active, the juice goes down to 228L barrels and 500L puncheons. We perform no battonage and the wine goes through full Malolactic Fermentation. The wine is left on lees for 11 months before going back to tank for an additional few months of aging.
