"We shouldn’t think that blending different terroirs is an oenological party. At the estate, when certain cuvées prove to be more interesting blended, we think it is appropriate to do so. Some terroirs are sometimes a little too rich and others a little too refined. This is also working with nature. During my oenology studies, a doctor of oenology maintained that you need a maximum of homogeneity to make a great wine. I told him no. To make a wine close to nature, you need ripe grapes, some less ripe and some too ripe. I got a bad mark in the next test, but today I make terroir wines, while he makes homogeneous and standard wines for the supermarkets." Producer Notes

"Not surprisingly, having only been in bottle for one week, the 2020 Chablis AC from Domaine Bessin is a little shaken up post-bottling, but it is also abundantly clear that there is excellent depth and transparency here, coupled to lovely acidity and plenty of length and grip. Based on how well the wines that were still in tank showed, I have zero doubt that this wine too will deliver lovely precision and focus as well, once it has recovered from the mise. The bouquet offers up scents of apple, pear, chalky soil tones, a touch of citrus peel and a topnote of dried flowers. On the palate the wine is deep, full-bodied and nicely balanced, with excellent material at the core, fine mineral undertow, zesty acids and impressive length and grip. The Aligoté grapes used for the Domaine's only white wine come from a total of 2.26 hectares of vineyards. A tiny 0.13 hectares situated in the commune of Nuits Saint Georges and 2.13 hectares in Villers-La-Faye in the Hautes Côtes are the sources. The vines in Nuits Saint Georges were planted in 2013, while those in Villers are impressively between 50 to 80 years old. These two vineyards are characterized by their deep clay soils. The winemaking process involves spontaneous yeast fermentation and aging for a period of 6 months in stainless steel tanks.
