"The 2019 Chablis “Vaillons” from Cyril Testut is a lovely example of this fine vintage, offering up a ripe, minerally-infused and very precise bouquet of pear, tart orange, wet stone minerality, incipient notes of paraffin, straw, a hint of anise and a topnote of citrus peel. On the palate the wine is bright, full-bodied and complex, with a rock solid core of fruit, excellent mineral drive and grip, a fine girdle of acidity and a long, youthful and beautifully balanced finish. This is lovely, but deserves at least a couple of years in the cellar to unlock its secondary layers of complexity. Fine juice." |
