93 RP. "Readers are undoubtedly familiar with the first wine from this program, the Cabernet Sauvignon from Beringer's 25-acre Chabot Vineyard. This wine, like all of these offerings, is made from 100% Cabernet Sauvignon aged in 100% new oak casks. The 1994 Cabernet Sauvignon Chabot Vineyard is a backward, full-bodied, muscular wine that is 5-7 years away from drinkability. With airing, the wine reluctantly gives up scents of pepper, iodine, cassis, mint, and earth. This full-bodied, large-scaled Cabernet begs for more bottle time. This wine should only be purchased by those willing to invest patience, as it will not provide enjoyable drinking when young." Wine Advocate #114, Dec 1997 |
