"With the twin legends of the 1989 and 1990 closing out the decade, it is easy to overlook the very, very fine 1988 Rayas. This is another big, sauvage vintage of Rayas, that flavor wise and aromatically, resembles a slightly smaller-scaled version of the 1990. The bouquet is deep and wild, with notes of venison, coffee, woodsmoke, garrigue, a bit of youthful, stemmy vegetal tones, roasted plums and cedar jumping from the glass. On the palate it echoes the wild nose, delivering layers of game and spice flavors, a fine core of fruit, firm tannins, and plenty of depth on the long and powerful finish. Like the 1990, this is not yet at its best for drinking, though it is at least five years more developed than the 1990. It is another stunning Rayas. Served with a superb black truffle and foie gras dish, this wine had the uncanny ability to pick up the flavors of the black truffles and meld them into its own flavors."
