"The 2006 The Pagan was made using the Italian technique called Appassimento in which the grapes are dried for 6-7 weeks in a humidity-controlled room after which they are crushed and fermented. A saturated opaque purple in color, the nose is slightly muted but gives up notes of smoke, mineral, meat, game, and blueberry. Full-bodied, dense, and rich, the wine has gobs of spicy black fruits, impeccable balance, and a lengthy finish."

Renowned for powerful, richly fruited Shiraz, most famously from the Barossa Valley, alongside age-worthy Cabernet and cool-climate whites. A warm climate and old, ungrafted vines produce wines of generosity and depth.
