"The last bottle of this wine that I tasted was eighteen months ago, and it was remarkably buttoned up. It took much longer to close down than many of the top wines of the vintage, but having once closed, I imagined that it would need quite a bit of hibernation before it reemerged. Much to my surprise, this bottle (tasted in February of 2001) was again in full bloom. The nose on this wine is totally spectacular, soaring from the glass in a blaze of sweet, plummy fruit, intense black raspberry, chocolate, duck, vinesmoke, sous bois, cloves, earth and vanillin oak. On the palate the wine is deep, full-bodied and voluptuous, with a juicy core of fruit, impeccable focus and balance, and a long, complex and velvety finish. For a 1989 red Burgundy, this wine shows uncanny purity and freshness, with tangy acids adding to the overall impression of juiciness. This is the greatest Georges Jayer bottling I have ever tasted (I have never crossed paths with the 1990), though I have very high hopes that the more youthful 1993 will give this wine a run for its money. Today, it is the quality equivalent of the ’89 Jayer Cros Parantoux!"
