"Young enologists Mounir Saoma and Rotem Brakin have created a new kind of negociant business. They specialize in small-lot grand and premier cru wines from growers who agree to work closely with them throughout the season, then they fashion these wines with exquisite sensitivity to the terroir. It is difficult to imagine a more precise evocation of Corton than this 2004, from a west-facing limestone slope on the Pernand side of the hill. That Corton character starts small, hidden behind the broad spice and toastiness of oak. It grows slowly, like a sphere expanding in space, the sun on fields of wheat and chamomile in bloom. A sense of limestone is what lasts, the wine opulent but restricted by its structure. That architecture feels precise and inimitable. If you can afford to invest in it, buy enough to open a bottle now, decant it and taste it over the course of several days. Store the rest away for a decade or more. I don't think you'll be disappointed."
