"I was totally floored by Domaine de Trévallon's 1990 Coteaux d'Aix-en-Provence Les Baux. It was fabulous with the beef, but the truth is it would have been great with anything, or nothing at all. Sweet layers of fruit, subtle herbs, cedar, tobacco and spices were all present in the glass, but the wine was really more about textural silkiness and elegance, both of which it showed in spades. Readers lucky enough to still be cellaring bottles can look forward to as much as another decade of fine drinking. What a wine!"

The world's most influential fine-wine producer and the benchmark for Bordeaux, Burgundy, Champagne and the Rhone. Its appellation (AOC) system codifies geography, grape and method, and its wines set the global standard for age-worthiness and terroir expression.
The world's most planted premium red grape, yielding deeply colored, tannic and structured wines with cassis, cedar and graphite notes. Firm tannins and acidity make it exceptionally age-worthy, whether as a varietal or the backbone of a Bordeaux blend.
Syrah (Shiraz) produces dark, powerful reds with black fruit, pepper and smoked-meat notes. It yields elegant, perfumed wines in the northern Rhone and bold, rich styles in Australia.
