"The 1995 Periquita ClĂĄssico Special Reserve is a CastelĂŁo . . . and becomes far more interesting with time, the fruit becoming more flavorful and fresher. Rather elegant and beautifully balanced, this seems fully mature, but still vibrant, with some moderate tannins on the finish and some lift to that fruit. It's also quite delicious, laced with baked strawberry mingled with some forest floor. It lingers nicely. It should keep holding and I suspect it is still capable of becoming more complex, melding the fruit nuances into the whole. If you're interested, the ClĂĄssico refers to this, says the winery: "Periquita ClĂĄssico recreates the style of the wine thirty years ago, when the grapes were still fermented with their stalks and the wines were chilled to achieve clarification, which usually created a deposit in the bottle" . . . . 100% CastelĂŁo . 80% clay soils and 20% sandy soils. Fermentation in stainless steel at 32ÂșC, with same stems. Same French oak. Aged in big wooden vats for about two years and then in bottle for about four years. Trying to make a replica of the old days of Periquita. To be appreciated 20 years after bottling as the old ones."
