"The Hautes-CĂ´tes de Beaune Blanc from PYCM features lovely aromas of grapefruit, lime zest, and fresh white flowers. The texture is light but crisp, and a salty minerality shines through on the palate. The grapes come from three parcels in the Hautes CĂ´tes, named for a nearby nature preserve in Cormot-Vauchignon at over 400 metres elevationâthe delayed budbreak at this cool site saved these vines from damage during the frost of 2021. The grapes were fermented in large, older oak casks that have now been racked into tank. (Drink between 2023-2033)"

2021 in Burgundy was shaped by severe April frost, mildew and a cool, wet season that slashed yields; the surviving wines are fresh, elegant and classically styled, with lower alcohol and a welcome return to restraint.
The world's most versatile white grape, producing everything from steely Chablis to rich, oaked whites. Its neutrality makes it a mirror of terroir and winemaking, and the foundation of white Burgundy and Champagne.
